Menu Plan Monday, July 10th!

Last week went well! We ended skipping a couple of meals because we just had so many leftovers in the fridge, then we got sick and didn’t feel like eating or cooking. So there will be some repeats going on this week! I did manage to eat up all the fruit and veggies–isn’t summer wonderful? I’m seriously excited about the fruit! I’ve got peaches, cherries, and strawberries in the fridge (some of them might end up in the freezer!) and I want to take advantage of a sale before it is over tomorrow to get some more!

Breakfasts:

I am not bored of the eggs/smoothie routine yet. I want to make some of the  Vegan Gluten-Free Blackberry/Blueberry Cobbler for breakfast–I didn’t get to it last week before getting sick. Maybe a version with peaches too! I got bruised peaches because they were cheaper, but that means they need to be gone soon!

Lunches:

For me–Quinoa Black Bean Salad

For my daughter: We made some tortilla/ham/egg/cheese wraps for her. She had one for breakfast and said it was delightful.

Dinners:

Best Damn Pork Chops, rice pilaf

Eggs Benedict Strata from Celebrations (Against All Grain) cookbook with strawberry spinach salad

BLT’s

Tuna Salad/Sandwiches

Pizza

Fish tacos and sautéed veggies

Leftovers

Brownies from a box–I don’t indulge often, but the Aldi’s brand of brownie mix is pretty amazing tasting.

    That cobbler looks amazing! I’m sure my family would love it. Thank you so much for sharing! Btw, we are in the same boat basically with intolerances. Between myself and my husband and kids, we all have different intolerances/allergies, but I try to cook gluten-free, dairy-free, corn-free and mostly sugar free. I don’t cook everything this way, but do my best to cook things that can be modified for everyone. My husband is also allergic to peanuts AND tree nuts (almonds, hazelnuts, walnuts and pecans- maybe more that we don’t know of). It becomes quite challenging to accommodate everyone.

      Oh wow! Nut allergies are the hardest! I have a son-in-law that has an actual allergy (not just an intolerance) and it makes it really difficult with baking and such! That seems like such a challenge. Has it happened gradually? I discovered this summer that my daughter is really sensitive to certain dyes and sugars–I have always been careful but all of a sudden she can’t enjoy things lik Kona ice without having a 3 week mental breakdown. Oi!

        The nut allergy was an all of the sudden thing. My husband was running errands, stopped for a cup of coffee with hazelnut coffee creamer, and about 30 mins later we were on our way to the ER because he was covered in hives and his tongue was swelling. It took us a while to discover what was going on. With the food issues with our kids, our oldest had gotten really sick several times after eating pizza or something else with a lot of gluten in it. We thought it was a stomach virus, but no one else in the house got sick. I ended up reading a lot about how diet is related to ADHD like symptoms, and decided to do a major change because of the digestive issues and focusing issues at school. The change happened over the summer, and it was hard. Gluten can have an opiate-like affect on the brain, and taking my girls off of it was like watching them detox. It was so hard. They occasionally eat gluten now (like breading on chicken), but there has been an immediate improvement in behavior. Our son has eczema, and just watching that has told me a lot about how he reacts to food. We also eat very little sugar or corn syrup and pretty much no dies either. We have seen very positive changes. 🙂 My husband also had VSG surgery for weightloss, so as a family we all changed our eating habits then. The surgery and the diet changes happened during the same summer. As a child, Red #40 made me feel out of control so I can sympathize.
