Menu Plan Monday September 9!

Another Monday, another menu plan. It’s funny how people want to keep eating isn’t it? If I don’t have a menu plan in place the week does not go well and I constantly have people asking me what’s for dinner. You’re on your own only works once or twice a week and then only if I’ve cooked and there are leftovers!

The theme for the GF Menu Swap over at Angela’s Kitchen is family favorites. We haven’t made a whole lot of favorites since going gluten-free, but spaghetti is always good. I’m planning a spaghetti bake with meatballs (lentil meatballs for me!) this week! Another favorite that I’m looking forward to now that fall is on it’s way is apple dumplings. No one turns those down and I made sure I made gluten-free ones last year. I will have to make them again soon and post the recipe!

The make ahead breakfast idea from last week went well and went not so well. The Paleo breakfast cookies were not a hit with my daughter (she seemed to think they had everything but the kitchen sink in them–actually asked me if I put brussel sprouts in them!), but the Banana Breakfast Donuts/muffins were a hit. (I don’t have a donut pan or donut maker and I don’t want another pan clogging up my kitchen, so we make do with miniature muffin pans and sometimes they almost turn out looking like donut holes!) This week we’re doing Paleo donuts and so far they are a hit. Whew!

Sunday
Breakfast: Raw, Vegan Vanilla Chia Seed Pudding with Sugar Free Apple Pie Chia Seed Jam with Healthy Monkey Bread
Lunch: Tacos at my sister’s house! I brought some guacamole and pico de gallo and used a Portobello mushroom with seasoning for my filling. My mom brought flour tortillas that she made using a recipe from Gluten Free On a Shoe String (second cookbook I believe) and they were excellent!
Supper: Still pretty full so just ate some popcorn

Rest of the week:
Breakfasts:
Paleo Donuts
Leftover Vanilla Chia Seed pudding with Sugar Free Apple Pie Chia Seed Jam!
eggs
Yogurt/toast for the dairy eaters
cereal in a pinch

Lunch/Dinner:
Shrimp and Corn quesadillas (found on Easy Eats webzine, but couldn’t find it this week when I looked for the link!)
Spaghetti and meatball bake (using lentil meatballs for me!)
Breakfast for dinner! Paleo pancakes this week!
Grilled cheese
Dijon Broccoli rice bowl from “Happy Herbivore”
Potato Chip Fish, remoulade sauce, rice pilaf
Pizza, salad
Smoothie, Popcorn
Leftovers!
